I have the incredible opportunity to be the interior designer for a coffee shop, which two of my longtime friends are opening! Certainly, an interesting few months lie ahead & I look forward to sharing this process I'm undertaking. For now, research & brainstorming are my work, as shown above by the stacks of publications & books I've poured over. Coffee has always been a love of mine, but I never thought it would change my life....so CHEERS TO COFFEE!

Spring Salad Spectacular
Cucumber Pineapple Jalapeno Cilantro Salad
This salad rocks on the 90 degree 90% humidity days when you wish you were on an island or in Mexico, but can't find either one of those things nearby. It is seriously easy to make & serves as a great base if you feel like adding other ingredients. The stronger flavors of the pineapple, cilantro, and jalapeno are a built in seasoning.
Ingredients:
3, 1 inch slices fresh pineapple
1 cucumber
1 cup cilantro
2 jalpapenos
Core the pineapple slices & cut the remainder into cubes (whichever size makes you happy). Peel the cucumber & cut into cubes. De-seed & mince the jalapenos. The cilantro can be cut into smaller pieces, but I like the leaves whole so I tore it apart with my hands. Throw into a bowl, mix....and done! These portions yield about 3 cups of salad.

Macadamia nuts
Avocado
Shrimp
Scallops
Chicken
